Oven-Steamed White Rice
2 cups extra-long
grain enriched white rice
2 tbsp. butter
1
tbsp. white vinegar
2 tsp. salt
dash pepper
4
cups boiling water
Preheat
oven to 350 degrees. In a 1 1/2 - 2 quart ungreased casserole combine
rice, vinegar, salt
and pepper. Dot with butter. Pour boiling water over rice, and stir until
butter is melted. Cover tightly with aluminum foil or
lid, bake 50 minutes (do not peak), (do not stir). Fluff
with a fork and serve with black beans,
string beef and plaintains for the traditional
Venezuelan pabellon. Several casseroles can be cooked simultaneously
to make enough for a crowd. (Water proportion should be adjusted for other
rice types).
