Peel, remove seeds, cut into squares and wash: 1 kilogram (2.2 pounds) auyama or pumkin Bring it to a boil in: 8 cups water & 2 teaspoons salt Reduce to medium heat and cook for 25 minutes or until soft. Strain and set aside. Meanwhile, melt in a large saucepan: 3 tablespoons butter or margarine Add & thoroughly sauté, for about 5 minutes: 1 cup finely chopped onion 1/2 cup finely chopped white part of a leek (ajoporro) Add & bring to a boil: 4 cups meat or chicken consomé/stock Reduce to low heat and cook for 2-3 minutes. Remove from heat and let sit for 10 minutes. Pour in blender, add auyama (pumpkin), 1/2 teaspoon salt 1/4 teaspoon white pepper and blend until very smooth. Return to saucepan. Bring to a boil, then reduce to low heat and cook for 2-3 minutes. Stir in: (*3/4 cup light cream or buttermilk) (*optional ) |
